Harvest sandwich with red hummus
A delicious, filling sandwich.
Ingredients
4 Sandwiches
- 8 slices Pågen Kärnsund
- 200g halloumi sliced
- 1 bunch of radishes
- 1 sachet of Mache lettuce
Sweet potato & beetroot hummus:
- 1/2 sweet potato (about 300g)
- 2 beetroots (about 300g)
- 4 garlic cloves
- 1 apple
- 4 tbsp oil
- 1 can of pre-cooked chickpeas (about 230g)
- 1 tsp sambal oelek
Method
Directions
- Rinse and cut the sweet potatoes, apple and beetroots into pieces.
- Place in a baking pan with the garlic and drizzle with oil.
- Bake in oven at 200 degrees for about 30 minutes.
- Remove the pan and allow it to cool for a while. Then put the contents into a mixer and add chickpeas and sambal oelek.
- Mix until the paste has a smooth texture.
- Fry the halloumi slices on both sides in a pan with a little oil until golden brown. Rinse and cut the biggest radishes.
- Add a tablespoon of hummus on the bread and top with halloumi cheese, a handful of lettuce and radishes.
- Finish with hummus and bread on top.
