Charlotte Royale with Pågen Gifflar Vanilj

A festive New Year's dessert that’s simple to fix


  • 2 bags of Pågen Gifflar Vanilj (vanilla)
  • Berry mousse (you can make your own according to the recipe below or use any other ready berry mousse mix)

Ingredients berry mousse:

  • 1 vanilla bean
  • 3 dl cream
  • 160 g sugar
  • 3 gelatine leaves
  • 6 dl sour cream
  • 125 g fresh raspberries
  • 150 g fresh strawberries



  1. Cover the inside of a bowl (about 20 cm in diameter) with plastic wrap
  2. Slice the Gifflar
  3. Cover the inside of the bowl with the Gifflar
  4. Pour in the berry mousse
  5. Cover the top with the rest of the Gifflar
  6. Put in the refrigerator to set for at least 4 hours or place in the freezer and take out at least one hour before serving.

Berry mousse:

  1. Soak the gelatine leaves in cold water
  2. Scrape out the vanilla bean into a saucepan.
  3. Boil the vanilla seeds, the scraped vanilla bean, cream and sugar.
  4. Remove from plate.
  5. Squeeze the gelatine leaves and stir into the cream
  6. Take out the vanilla bean from the pan
  7. Add the sour cream and the berries
