Courgette and garlic toast


(serves 4)

16 slices of small soft bread

  • 4 tbsp light crème fraiche
  • 2 cloves garlic, crushed
  • 2 courgettes, thinly sliced
  • 4 tomatoes, thinly sliced
  • 2 peppers, thinly sliced
  • 16 slices of cured or smoked ham


Mix the crème fraiche with the garlic and add salt & pepper to taste.

  1. Divide the courgette, tomato and pepper over half the bread slices.
  2. Add a dollop of the seasoned crème fraiche over the vegetables and add two slices of the ham.
  3. Add the other half of the bread on top, as a sandwich lid. Press together and grill in a toastie maker or waffle iron.
  4. Slice into neat portions before serving.
