Lemon root veg sandwich

  • 2 slices bread
  • Lemon spread 
  • thinly sliced root vegetables
  • dried berries/fruit
  • mixed leaves

Lemon spread (approx. 5-6 sandwiches) 

  • zest from ½ lemon
  • 1 tbsp freshly-squeezed lemon juice
  • ½ tbsp runny honey
  • 150 g light Philadelphia
  • 2 tbsp chopped parsley
  • Salt
  • Pepper


  1. Mix together the ingredients for the lemon spread and season to taste.
  2. Divide the lemon spread between the two bread slices.
  3. Peel and thinly slice your chosen root veg. Add the veg to one slice and top with a little salt. Add berries to the other.
  4. Add the salad to the root veg and put the halves together.
