Harvest sandwich with red hummus

A delicious, filling sandwich.


Ingredients

4 Sandwiches

  • 8 slices Pågen Kärnsund
  • 200g halloumi sliced
  • 1 bunch of radishes
  • 1 sachet of Mache lettuce

Sweet potato & beetroot hummus:

  • 1/2 sweet potato (about 300g)
  • 2 beetroots (about 300g)
  • 4 garlic cloves
  • 1 apple
  • 4 tbsp oil
  • 1 can of pre-cooked chickpeas (about 230g)
  • 1 tsp sambal oelek

Method

Directions

  1. Rinse and cut the sweet potatoes, apple and beetroots into pieces.
  2. Place in a baking pan with the garlic and drizzle with oil.
  3. Bake in oven at 200 degrees for about 30 minutes.
  4. Remove the pan and allow it to cool for a while. Then put the contents into a mixer and add chickpeas and sambal oelek.
  5. Mix until the paste has a smooth texture.
  6. Fry the halloumi slices on both sides in a pan with a little oil until golden brown. Rinse and cut the biggest radishes.
  7. Add a tablespoon of hummus on the bread and top with halloumi cheese, a handful of lettuce and radishes.
  8. Finish with hummus and bread on top.
