Feta sandwich with honey dressing
- 4 portion breads
- 40 g mixed salad
- Red onion
- Honey dressing (see recipe below)
- 2 tbsp olive oil
- 1 tbsp white balsamic vinegar
- ½ tbsp runny honey
- Mix together the dressing ingredients until blended. Season to taste with salt and pepper.
- Cube the feta.
- Cut the onion into rings.
- Divide the salad, feta and onion over the bottom half of the sandwich.
- Drizzle the honey dressing over the top slice and place on top.
