Carrot sandwich


Ingredients

4 pers.

  • 8 slices dark sliced bread Cottage cheese with chives (recipe below)
  • Pickled carrots (recipe below)
  • Black pepper
  • Rocket

 

Cottage cheese with chives and black pepper

  • 200 g cottage cheese
  • 1 bunch chives, chopped
  • Freshly-ground black pepper
  • Salt

 

Pickled carrots

  • 200 g carrots, peeled and chopped
  • Approx. 1 clove garlic (or more, to taste)
  • 60 ml water
  • 40 ml vinegar, 12 %
  • 40 g sugar

Method

  1. Boil the water, vinegar, sugar and onion slices.
  2. Remove from the heat and add the carrot slices.
  3. Allow to cool and refrigerate.
  4. Mix together the cottage cheese, chives and black pepper. Season with salt.
  5. Divide the cheese mix between the 8 bread slices.
  6. Add the pickled carrots, black pepper and rocket.
  7. Add the top slices and serve.
