Turkey and mango sandwich
- 4 portion breads
- 1 batch mango chutney mayonnaise (recipe below)
- 40 g mixed leaves
- 12 slices smoked turkey
- 8 slices turkey bacon, fried
- 20 g toasted sunflower seeds
Mango chutney mayonnaise
- 40 g mango chutney, mixed
- 120 g light mayonnaise
- 1 tsp lime juice
- Mix together the ingredients for the mango chutney mayonnaise and season to taste.
- Spread the mayonnaise on the bread.
- Add the salad, turkey, bacon and sunflower seeds to the bottom slices.
- Add the top slices and serve.
